Flirting with Champagne

Champagne adds delectable elegance to most any recipe, whether you're using it to deglaze a pan, as a base for dressing or sauces, or to add depth to a meat marinade. Cooking with champagne is much like cooking with wine. You don’t have to break the bank, either. Any cheap bottle will do.

Have some left over from a party? Add a little to your next day’s recipe and see for yourself. You’ve got up to a week to use an opened bottle of champagne for cooking without jeopardizing the result. Don’t stop at the dinner table, though. Use champagne for soups, desserts and cocktails as well!
